Raw Food recipe- Mango-lime-coconut ice cream
Here is nutritious, simple and oh so yummy recipe my husband came up with. We got the ice cream machine a while ago, and since it was just sitting on our kitchen shelf for a while we decided to use up some really nice, ripe mangos and voila, a great recipe was born!
I do hope that you will enjoy this recipe as much as we do, every single time! You can of course experiment with a variety of toppings: chocolate sauce, caramel sauce or just sprinkle with soaked goji berries or shredded coconut. The variations are endless, use your creativity to make the best ice cream for you and your family.

Mango-lime-coconut ice cream
Makes 18-20 ounces (almost 2 loads of ice cream in 12-ounce Hamilton Beach machine*)
Flesh of 1 large ripe mango (If smaller mango, adjust other ingredients)
5 tablespoons maple syrup
3 tablespoons coconut oil
Juice of ½ lime
½ tsp vanilla essence (optional)
6 ice cubes from a standard cube tray
Put empty serving bowls in freezer to chill. Blend all ingredients in blender at high speed until ice has dissolved. Add 10-12 ounces to ice-cream machine. Mix for 14 minutes, then let sit for 2 minutes. Serve. Store the remaining mixture in a container for the next day.
* if you do not have an ice-cream machine, you can still prepare this delicious ice-cream!
